Summer is all about light bites and barbeques. When it starts to get hotter, spending too much time in the kitchen can be a drag; however, that doesn’t mean you have to sacrifice quality. Here are some quick and easy dishes that’ll be sure to put a yum in your tum!.

Chorizo and Tomato Salad

Nobody makes summer food like the Spanish. Chorizo sausage is hugely versatile and full of smoky flavors. When it’s not grilled on a barbeque it’s excellent in salads. Chop it up into small pieces and mix it in a bowl with some diced tomatoes and thinly cut red onions. Add some olive oil and salt as per taste. Chorizo and tomato salad is refreshing, filling and perfect for the summer.

Ham, Mint and Pea Soup

Ham, mint and pea make the perfect summertime soup. Simply blend together a cup of peas, pack of bacon, handful of mint leaves, 1 onion and a cup of vegetable stock. Season to taste, and then serve either hot or cold with a hefty dollop of crème fraiche and some crusty brown bread.

Homemade Barbeque Sauce

Not quite a dish on its own, but no doubt you’ll bring out the barbeque at some point during the summer; and when you do, there’s no better marinade than homemade barbeque sauce. Blend together; a can of chopped tomatoes, 2 tablespoons of brown sugar, 4 tablespoons of Worcestershire sauce, 2 teaspoons of English mustard, a red onion and a pinch of salt and pepper. Brush it over chicken, ribs or steaks and leave it covered overnight in the fridge to soak in.

Haddock in Garlic Butter Sauce

If you’re holding a dinner party, fish is quick to cook, easy to present, and sure to impress. Shallow fry the haddock on a high heat for 30 seconds to one minute, and then put it under the grill to crisp until brown around the edges. Mix butter, finely chopped garlic and basil in a pan on a low heat until melted, and then drizzle it over the haddock. Serve with boiled potatoes and steamed vegetables for a super-nutritious side.

Mixed Fruit Salad

A fruit salad is ideal as both a light snack and a standalone meal.  Not only do they take a mere five minutes to prepare but, they are also mega-healthy and will keep you hydrated due to the water content. Mix together apples, oranges, strawberries, grapes, peaches – basically, anything from the fruit aisle. Add a scoop of yogurt or vanilla ice cream if you want a more creamy texture.

Prawn Cocktail with Marie Rose Dressing

No list of summer dishes would be complete without a prawn cocktail. Mix one part mayonnaise and one part tomato ketchup with a splash of Worcester sauce and lemon juice. Add a handful of prawns and mix it all together. Serve in a sandwich or with a light garnish of iceberg lettuce, tomato, and cucumber.
